Smoky Braised Beans


115g Miza Smoky Tomato Sauce 
50g Diced Onion
30g Diced Carrot
175g Chickpeas, drained
2 Tsp Thyme leaves, chopped
2 Tsp Oregano leaves, chopped (or 2 Tsp Dried)
1/2 Tbsp Olive Oil 
2 Bay Leaves 
1 Tbsp Pesto 
4-5 Kalamata Olives 


To Serve: 
Crusty Sourdough or enjoy as a side

Instructions
  1. Prepare the vegetables first. Peel and finely chop the onion and carrot. Wash and finely chop the thyme and oregano. 
  2. Heat a medium saucepan on medium/high heat, and addd the olive oil. Once hot add the onion and carrot with a pinch of salt and cook until soft and translucent, about 5-8 mins. 
  3. Add the chopped oregano and thyme and cook until fragrant, about 1-2 mins. 
  4. Add the sauce and beans and bring to a simmer before adding in the bay leaves. Cook for 10-15 mins on medium heat. 
  5. Serve with a drizzle of olive oil, pesto, sliced kalamata olives and some crusty bread!
