Satay Noodles 


100g Miza Creamy Cauli Sauce
20g Almond/Peanut Butter
2 Tsp Soy Sauce 

75g Vegetable Stir Fry Mix

1/2 Tbsp Sesame Oil

1 Nest Egg Noodles

6g Coriander

1/2 Lime, juiced
1 Pinch Chili Flakes

1 Handful Peanuts 


To Serve:
120-150g Tofu (Optional)

Instructions
  1. Make the sauce first by mixing the Creamy Cauli Sauce with soy sauce and almond/peanut butter. Set aside. Separately, finely chop the coriander, and juice the lime. 
  2. Heat a medium frying pan with the sesame oil on medium/high heat. Once hot add the vegetable mix and stir fry for 3 mins. Add a pinch of salt and pepper. 
  3. At the same time, cook the noodles. Drain and rinse with cold water, then set aside. 
  4. Add the sauce mixture to the vegetables and stir to fully coat the vegetables. Cook for  1 min and then add the chopped coriander and lime, then add the noodles and toss to coat through the sauce. Add a splash of hot water to loosen the sauce. 
  5. Serve immediately with the roasted peanuts and optional tofu. Drizzle over extra soy sauce and some chili flakes (optional).
