Creamy Cauli Bucatini with Pancetta

Wash and chop the parsley, and set aside.
Cook the pasta in a pan of salted boiling water, cooking 1 minute less.
At the same time, in a medium frying pan over medium-high heat, add a drizzle of olive oil and once hot, add the pancetta and fry for 3-4 minutes until cooked through.
Turn down the heat and add the sauce, stir to coat. Using tongs add the pasta directly to the pan and toss through the sauce. Add a splash of the pasta water to loosen and emulsify the sauce.
Serve the pasta with chopped parsley and grated parmesan.
