Cherry, Mango & Mint Salsa
100g Mango, peeled and diced
195g Cucumber, diced
30g Spring Onion, finely sliced
120g Cherries, pitted and chopped
3 Tbsp Olive Oil
2 Tsp Sherry Vinegar
15g Coriander, finely chopped
6 Sprigs Mint, leaves picked and chopped
1 Lime, juiced
Salt and Black Pepper

Instructions
- Prepare the cherries, cucumber and mango and transfer to a mixing bowl. Add the chopped spring onion, coriander and mint and stir through.
- Finally, stir through the olive oil, sherry vinegar, lime juice, and season with salt and pepper.
- Enjoy as a side salad or a salsa to Turkey Chilli, or regular chilli, tacos, serve with crispy skinned fish, or vegetable curry.
