Cherry, Mango & Mint Salsa
100g Mango, peeled and diced
195g Cucumber, diced
30g Spring Onion, finely sliced
120g Cherries, pitted and chopped
3 Tbsp Olive Oil
2 Tsp Sherry Vinegar
15g Coriander, finely chopped
6 Sprigs Mint, leaves picked and chopped
1 Lime, juiced
Salt and Black Pepper
Cook Time: 0015
Prepare the cherries, cucumber and mango and transfer to a mixing bowl. Add the chopped spring onion, coriander and mint and stir through.
Finally, stir through the olive oil, sherry vinegar, lime juice, and season with salt and pepper.
Enjoy as a side salad or a salsa to Turkey Chilli, or regular chilli, tacos, serve with crispy skinned fish, or vegetable curry.
